Salmon in Mojo Sauce

I basically like to do 2 things with salmon, either baking it in the oven with carrots, onions, lemon and honey, or simply frying the salmon cubes and serving them with this delicious sauce:

Mojo Sauce:

1 garlic clove
1 tsp paprika
1/2 tsp ground cumin
2.5 tbsp olive oil
1 tbsp white wine vinegar

Easy peasy recipe!

1. Just cube the salmon fillet, remove skin and spines, put some salt and pepper on it before frying the cubes in a pan on some olive oil.

2. While the salmon is getting ready, prepare the sauce: mince the garlic, and mix it with the paprika, cumin, olive oil, vinegar and some salt.

3. Remove the salmon cubes from the pan, and serve it with the sauce, some creamy mashed potatoes and a fast green salad.

    Oven baking and pan-frying are my two favorite ways with salmon, too. If I had to choose one, it would be frying in a little bit of olive oil, just as you recommend. It adds something extra to the richness/moistness factor I think. I’d love to try your mojo, but my husband hates cumin. Any suggestions for a substitute spice?
