Arugula and Orange Salad

We’ve been to the supermarket the other day and my Mr’s mom was holding a pack of arugula in her hands questioning if it is any good. She never tried it before, I like it, so we bought it and at home came the moment of truth – she tasted it and decided not to eat a piece of it any more. Now, I got ‘stuck’ all alone with a big bag of arugula, so set out to look for a nice recipe. Well I found many! I decided to try this one first, from Elana’s pantry. I have to say the combination of orange with the deep flavored arugula sounded strange, but I made it and loved it! Here is the recipe for you to try it as well. Simple, flavorful and totally healthy, perfect for all of you trying to switch to a healthier diet in the new year πŸ™‚

Ingredients (3-4 portions)

4 cups arugula
2 oranges, peeled and cut into segments (it would totally work with juicy clementines or mandarins as well)
3 tablespoons olive oil
1 tablespoon vinegar
salt to taste

Preparation:

Place arugula and oranges in a bowl, drizzle with olive oil and vinegar, then sprinkle with salt. Toss, serve and enjoy!

  2. I love arugula and buy it all the time, I lke to mix it with roasted peppers, but will give it a try with oranges, it looks delicious. Thanks for sharing πŸ™‚

  3. That does look like a nice combination. Sometimes you just have to give things a new try. I was hesitant to try a recipe with spring salad mix, grapefruit and pistachio nuts, but with the dressing it was fantastic.

    • Oh that sounds yummy!! With pink grapefruit I guess, the yellow one tends to be very very bitter here πŸ˜€

      • I did use the pink but the dressing is sort of a sweet creamy one so it does offset any bitterness. I used to work with a guy who would come up from one of our offices in the south & I saw him eating an orange one morning. When I told him it was the biggest orange I’d ever seen, he told me “that’s because it’s a grapefruit”. Oh my – can you imagine just eating a regular grapefruit in the morning like an orange? Only thing I can think of that would be worse, is washing it down with milk after – yuck!

      • Haha yup, however, I sometimes have natural yoghurt + muesli + grapefruit for breakfast, and I love it πŸ˜€ (although I could truly never wash it down with milk or even orange juice, for that matter…)

    I love the peppery taste of arugula with sweet orange. I also like to add a little red onion and olives to the mix sometimes.
