Sirloin Medals with Green Bean and Tomato Salad

I’m pretty sure this is one of the simplest and quickest meals that you can prepare with only a few ingredients. Now as it normally is with few ingredient recipes (and any recipes, really), the better the quality, the tastier the dish will be. For this quick dinner I used one of our favourite meats, sirloin, that is probably the juiciest, most tender meat around, thus in my opinion, worth that little extra money every now and then 🙂

pork sirloin medals
mustard and black pepper spice mix (now it is also easy to mix together, if you don’t have it, I’d mix some olive oil, mustard, pepper and salt and brush the meat pieces with the mixture)
fresh or frozen green beans
cherry tomatoes
olive oil, vinegar and salt

1. Season the sirloin medals with the spice mix and fry them in a pan on a bit of olive oil.
2. For the salad, cook the beans, cut the tomatoes into pieces and mix the veggies with a bit of vinegar, olive oil and salt.
