Mango-Double Chocolate Muffins

We went to visit a friend of mine the other day and keeping in mind that they have a toddler (and a mini kiddo), I wanted to prepare something that suits a grown up taste as well as a kid’s and it is also easy to pick up and run-back-to-the-toys with. I had a half mango and a bar of spotted cow chocolate at hand, I thought these would add to a nice tray of muffins 🙂

Mango-Double Chocolate Muffins

125g butter (or half cube RAMA margarine is what I use)
125g sugar
2 eggs
250g flour
1 small pack baking powder
50ml milk

half mango, cored, peeled and cubed
1 bar of chocolate of your choice, broken into little pieces (I used a Milka spotted cow bar, milk and white chocolate – mmh…)

1. Mix the butter, sugar and eggs
2. Mix the flour and baking powder, add it to the egg batter and mix until smooth
3. Add the mango cubes and chocolate, mix it in (with a spoon or something, no need to use a hand mixer here anymore)
4. Pre-heat the oven to 180 degrees C, prepare your muffin baking tray (I have a traditional one, with muffin papers)
5. Fill the holes with the batter and place the tray in the oven.
6. Bake them for around 30-35 minutes or until golden.

  3. looking so yummy! I really felt like trying this one just after seeing the pictures, but my husband doesn’t like muffins, and my baby is too small to eat this. 😦 But I am gonna try this one some day as it looks easy also. 🙂

    • You can also halve the ingredients, and make only a few 😉 oh it is very very easy! This is my go-to basic muffin recipe, I always just change the extras (dried or fresh fruits, chocolate, nuts…)
