Spicy Breaded Chicken Drumsticks – in the oven!

First post in 2013 Yay! It took a week because of a damned flu, but good things are worth waiting for :p So I have made this chicken 3 times already and it is just as amazing as it is easy – and even healthy, give it a try!

chicken thighs, I leave the skin on

Vegeta or any similar spice rub
olive oil


1. Bread the chicken thighs: coat first with flour, then the egg (or egg + little milk mixture), and finally the spiced breadcrumb (I used about 70% crumb 30% spice).
2. Place them on a lined baking tray, sprinkle with olive oil and push it into the pre-heated oven for about 50-60 minutes, turning the thighs after 30 minutes.

I find it easiest to eat chicken thighs without cutlery, if you do the same you might wrap the ends in foil so as not to burn and mess up your fingers.

  1. Awwww, so the flu’s made it’s way to you, sorry to hear you were down with it. Seems like the Boston area is getting hit very hard right now with 5-8 hr. waits in the emergency rooms.
    Chicken’s always a good safe bet for recovery & this looks very tasty. Feel better.
