Fresh Spanish Pasta Salad
My first encounter with this great dish was in Spain earlier this year, when we were visiting family with my Mr. The original version somehow did not get photographed, but luckily we both enjoyed it so much that the 2 of us could remember all the ingredients that this dish had. Fresh and simple, with just a little cooking required, best for summer but we devoured it with just as much appetite on a cold and dark November night.
Fresh Spanish Pasta Salad
Ingredients:
Pasta of your choice (I used fusilli), cooked
1 can tuna
about 10 surimi sticks, cut into pieces
black and green olives
1/2 white onion (or 1 small), sliced – you can use red onion as well but white onion has a milder taste and suits better this dish. It is also better for a delicate stomach 🙂
about 1 cup pineapple cubes
1-2 tomatoes, cubed
olive oil, vinegar, salt
Mix all the ingredients, drizzle with olive oil, vinegar and salt, toss and serve. Can be consumed fresh or refrigerated.

Looks terrific & you made me look up surimi sticks. I know what they are! Just never knew the name of them.
And is that the correct name? I was just guessing 😀 Also I’m not totally sure what they are made of, but I like them anyway 😉
