Breaded Zucchini Slices with Creamy Mashed Potatoes
As you can see the posting frequency is quite limited – I can totally blame it on the summer. When we are at home, it is too hot to turn on the oven or simply stand in the kitchen elaborating a delicate fancy dish – so our repertoire is quite limited too recently… we generally just grill a few slices of spiced chicken or pork and toss some veggies in the pan to accompany with the meat – forgive me that I don’t make posts out of those 😀
A couple of days ago however the temperature was a bit lower than the usual, so it was time to fry some zucchini!
Ingredients and preparation:
For the zucchini:
Wash and slice 1 decent sized zucchini, bread it the Hungarian way: cover with 1. flour, 2. egg, 3. breadcrumbs, and fry in oil until golden. I have run out of paper towels so I placed them on a couple of stale bread slices to absorb the extra oil.
For the mashed potatoes:
I like to prepare it with mayo and butter – boil the potatoes, mash them and mix until creamy with some butter, mayo, salt and pepper.
Serve with mayo or ketchup of your choice and enjoy! 🙂
I completely agree with summer & cooking. I just read that we in the Northeast have broken the record for the hottest summer here & without central A/C, burgers on the grill seems to be our default. But these look fantastic! Another idea to add to my list.
Yeah weather is going crazy! I wish I had space for an outdoor grill 😀 I’m afraid the balcony is occupied by all those tomato plants by now…
