Chicken and Veggie Skewers
I finally found some skewer sticks in the local grocery store and couldn’t resist to use them right away! So apart from using 1 stick as support for my mint plant (it was starting to get out of control 🙂 ), I made a fast and healthy chicken and veggie skewer lunch with a fresh mixed salad.
Ingredients (3 sticks):
1 chicken breast
1 red onion
1 white onion
1 bell pepper
olive oil, salt, pepper and any other spices to your liking, I used chicken spice mix this time
Preparation:
1. Rinse the sticks and cut the ingredients into bite sized pieces.
2. Prepare the skewers (onion, chicken, pepper, onion, chicken, pepper, etc)
3. Sprinkle the skewers with olive oil and spices
4. Prepare on barbecue or in the oven (like me 🙂 ) – around 30-40 minutes at 220°C/430°F, turning them after 20 minutes.
Serve with any side you prefer, I prepared a fast tossed salad. Enjoy!
