Chorizo and Corn Stuffed Mushrooms
I would say this is something for men. Not men only, of course, but it definitely has a manly quality to it: chorizo, corn and tomato – anyone disagrees? : ) Also it is a ridiculously easy and satisfying meal.
Ingredients (for 2 persons or 1 very hungry):
6 bigger mushrooms (or small ones but then take more :D) – stems and caps separated
(leftover) chorizo
corn
tomato sauce
salt, pepper, cumin seeds
1. Pour the chopped chorizo into a frying pan and let it simmer for a while (no extra fat or oil needed, the chorizo will release just enough). Add the chopped mushroom stems, corn, tomato sauce, salt and pepper. Mix and let simmer for a minute or two.
2. Fill the mushroom caps with the above filling, sprinkle with cumin seeds and transfer to a baking tray lined with tinfoil or baking sheet.
3. Sprinkle with olive oil and push it in the pre-heated oven, let bake for about 20-25 minutes on 200°C.
4. Enjoy!
