Mozzarella Stuffed Chicken Breast with Shaved Zucchini

It is March and the bikini season is approaching with full speed! Let me contribute to all those perfect-swimsuit-shape-plans with this easy and fabulous recipe. The idea of the ‘shaved’ zucchini I have captured in Paris, it was served with a tender piece of grilled white fish. Well I did not have any fish at home this time so I had to top it with chicken – I also had some leftover mozzarella from the other day’s pizza, I stuffed it in the chicken and voila! A dish worthy of a fine Parisian restaurant : )

Mozzarella Stuffed Chicken Breast with Shaved Zucchini

Ingredients (forΒ 2 persons):

1 chicken breast, sliced
1/3 mozzarella
1.5 smaller zucchini (2 would have been nice too)
olive oil, salt, pepper

home-made no knead bread for serving (optional :))

Yes, that’s all!


Preparation:

1. Fill the chicken breast slices with a piece of mozzarella, roll it up and secure with a meat pin, sprinkle with salt and pepper and fry them in a frying pan on a little olive oil (it would also be perfect in the oven, I was short on time this time)
2. Shred/grate the zucchini(s), sprinkle with salt and pepper and fry on a little olive oil (around 5-7 minutes is enough).
