It is time to post a recipe about something much more resolution friendly, don’t you think? 😉 Anyway, I found this great recipe after looking for some nice salad idea with apples (as I got a thousand-year old – okay, well, a month old) apple from my grandmother the other day). I had to think twice whether to really put raisins and cinnamon in this thing or just skip it, but we only live once! Give it a go, this is really amazing and delicious!
Chicken-Apple Crunch Salad
2 cups cubed cooked chicken breast
1 cup diced apple
1/2 cup diced celery (I used iceberg lettuce instead as I didn’t have celery at home)
1/4 cup raisins
2 tablespoons chopped green onions
1/3 cup low-fat mayonnaise
1 tablespoon reduced-fat sour cream (I used leftover natural yoghurt)
1 teaspoon fresh lemon juice
1/4 teaspoon salt
1/4 teaspoon freshly ground black pepper
1/8 teaspoon ground cinnamon
1. Combine first 5 ingredients in a large bowl.
2. Combine mayonnaise and remaining ingredients, stirring well with a whisk.
3. Add mayonnaise mixture to chicken mixture, tossing well to coat.
I served it with a fast onion-tomato focaccia this time.
